chocolate banana muffins

these are not totally breakfasty, with all the chocolate and such… but they are still pretty healthy- especially if you believe that chocolate is one of your essential daily nutrients!  (it is, trust me…)

crunchy chocolate-banana muffins

For the topping:

2 tbsp rolled oats
1 tbsp uncooked amaranth
1 tbsp raw sugar or sucanat
2 tsp cocoa powder
½ tsp cinnamon (optional)
2 tsp coconut oil

For the batter:
1 cup rolled oats, ground to flour in your processor
1 ½ cups flour (wwp or spelt)
½ cup sucanat
½ cup cocoa powder
2 tsp baking powder
½ tsp baking soda
1 tsp cinnamon (optional)
½ tsp seasalt
¾ cup soymilk
4 apple bananas (or two regular-sized bananas) = about 1 cup mashed banana
1/3 cup oil (safflower or coconut)
½ cup chocolate chips (optional… but makes the end result so tasty!)

Preheat your oven to 400 degrees. Mix together the 2 tbsp whole oats, amaranth, 1 tbsp of cocoa, 2 tbsp sugar/sucanat, ½ tsp cinnamon and 2 tsp oil and set aside- this is for the crunchy topping.  Blend 1 cup of whole oats in the food processor; sift all other dry ingredients into a large bowl.  Blend the bananas, oil and soymilk in the food processor until well blended, then add the wet to the dry and mix gently.  Toss in the chocolate chips and stir gently.

Fill 12 greased muffin tins/ silicone muffin cups nearly full, then sprinkle topping on each. Bake 28 minutes for muffins; this recipe also works well as a mini-loaf.  The mini-loaf needs 30-35 minutes in the oven.  For both muffins and the mini-loaf, the toothpick test does not work- I think maybe the bananas make it more sticky, so you just have to trust in timing.  My various batches made 6 muffins and 2 small loaf pans, or 9 muffins and one mini loaf pan.

    • my friend said it tasted like sno-caps! and indeed, the crunch of the amaranth is quite nice with the softness and sweetness of the muffin. and truthfully, i have pounds of amaranth to use up- and i realized after buying it all that i don’t really like it cooked!
