this is a follow up to the bowl food posting. i had an upset stomach today and wanted to make the most healthy lunch possible. with a dearth of vibrant veggies in the fridge, i settled on another bowl of miscellaneous foods. but see how pretty….
millet and brown rice are the base, topped with lacinato kale, choi sum, longbeans, and carrots sauteed in coconut oil; for some protein i tossed in hemp seeds, pumpkin seeds and cooked mung beans. it is topped with luscious tahini-miso dressing, made with tahini, red miso, fresh-squeezed calamansi juice, garlic, ginger, braggs, water, a splash of apple cider vinegar, a drop o’ honey, black pepper and a pinch of cayenne.
