Today I decided to make my everyday bran muffins, a four-grain version. This recipe takes a total of five minutes to mix up and only 25 minutes or so in the oven, so it is really instant gratification! You could also make it five- or six-grain using about ½ cup of cooked quinoa, millet or amaranth, or substituting some of the spelt flour with other grains that I am not yet well versed in….
Everyday bran muffins (with four grains) (vegan and soy-free)
1½ cups wheat bran
½ cup quick oats
1¼ cups rice milk
¼ cup oil (I used ½ coconut oil and ½ safflower)
1/3 cup maple syrup
1 cup spelt flour
1 tablespoon baking powder
Preheat your oven to 400 degrees. Mix the bran and oats with the ricemilk, oil, and maple syrup and let it sit for a few minutes. Add the spelt flour and baking powder and mix well. Drop into muffin tins or silicone cups. For 12 muffins bake for 22 minutes, for 10 muffins bake for 27 minutes.
